History & Evolution of the Filipino Cuisine
Constantly evolving, Filipino cuisine is slowly earning popularity around the globe for its fusion of east & west including Europe packed with flavor & spicy dishes.
For years, including the Philippine Revolution’s Timeline, other countries who occupied the Philippine territory arrived on the Islands influencing the Filipino dishes that are cooked & served in homes today.
Filipino cuisine is constantly changing since the Chinese trade opened through the “silk road” who introduced the country to seafood, sea plants, rice, soy sauce, spring rolls, dumplings & Ma Chang.
While the Spanish regime, introduced cheese, cutlery, cattle raising & tomatos, Americans brought in chocolate, canned meats and Oats.
Traditional Filipino food has changed through the years, where every conqueror left a mark & represented their country in each dish & was partly written in one of Dr. Jose
Rizal’s Revolutionary novels.
A story also circulated during the time of Legaspi’s arrival in the Islands with a small group of men, in the Visayas, around the Cebu area decided not to plant rice, trying to find ways to peacefully get rid of the invaders.
But the Dutch & the Spanish fleet were able to buy goods coming from the inter-island trade in the Southeast Asian region, known as the Silk Road.
Before all these however, Historian Ambeth Ocampo writes:
“We also cooked over open fires, foraging herbs and roasting meats.
Using fruit and dried leaves to flavor our food—whether a meaty broth, stew, or stir-fry—is a prehistoric tradition that has not left our palate.”
